Before I jumped into Barbecue, cooking “French Laundry” style multi course meals was my favorite way to cook, but a good portion of my culinary career was spent in banquet kitchens in Marin, Napa and San Francisco.
I worked with some amazing chefs. I’m talking about consummate professionals who had eyes in the back of their head with x-ray vision. Chefs who wouldn’t break a sweat or bat an eye under pressure.
We used to put out a staggering amount of food for some very high class clientele. Multiple banquets on the same day for anywhere from 300 to 2000 guests. The prep work, coordination and execution of this work was a thing of beauty.
Every vegetable cut to a uniform consistent size, every piece of meat butchered and trimmed, then seared, roasted, braised or sauteed to a precise doneness. All components cooked and seasoned to perfection.
Not a single thing out of place, not one drop of sauce on the rim of the plate. Every single dish, coming out on time, looking exactly like the one before it.
Sometimes we served foie gras, sweetbreads, caviar, wagyu and truffles to 600 guests at a wine pairing dinner. Other times we made house salads and grilled cheeses for a group of 20 businessmen.
This experience is why I believe it is not only possible to scale production of a quality product but to also create a wide variety of products for all sorts of different people.
I feel like the hash game is saturated by a lot of “chefs” who can only serve wagyu to a party of 6.
Everyone’s talking quality over quantity like it’s some holy fucking life choice.
How about putting out quality products that the masses can afford?
Whether it’s hash, rosin, flower, prerolls, edibles, topicals or any other product I have yet to create, I am ALWAYS going to put every effort possible into making it the best it can be for whatever price demographic is asking for it.
